New Year, New Habits...That is what V and I would like to inculcate. Today's lunch for V is Quinoa Sushi.
Ingredients:
1 cup Quinoa
3 Tbsp Sushi seasoning
5-6 sheets Smoked Salmon
1/2 Carrot, cut into thin strips lengthwise
1/2 stick Celery, cut into thin strips lengthwise
4-5 sheets Nori
To taste Japanese Mayonnaise (I used regular mayonnaise)
To taste Wasabi
Note:- I usually also use avocados, zucchinis, cucumbers and more. The choice is endless. Be creative and use your favourite vegetables. For a vegetarian version, omit the smoked salmon and add more vegetables or scramble some eggs and cut into strips before arranging them on the quinoa.
Method:
1. Cook quinoa as per instructions on the packet. Once cooked, while the quinoa is still warm, add the sushi seasoning and mix well. Once the mixture is cool, its time to assemble the sushi.
2. Place a Nori sheet with shiny side down on the bamboo mat.
3. Fill with 4 Tbsp or more of seasoned quinoa and spread to flatten on 1 half (closer to you) of the Nori sheet.
4. Squirt some mayonnaise and spread sideways (left to right) and spread some wasabi as well.
5. Arrange carrot strips, celery strips and salmon.
6. Roll the Nori sheet tightly.
7. Cut up the roll and serve with pickled ginger, soy sauce and more wasabi.
